The Perfect Prime Rib Roast for the Holidays

by Top of the Hill Staff on December 11, 2023

The holidays aren't complete without a gorgeous, juicy prime rib roast as the centerpiece of your table. We are here to provide you with the best quality cuts of meat and helpful tips for preparing roast perfection.

What is Prime Rib?

A standout prime rib is truly something to behold. This impressive roast consists of ribs 6 through 12 of the cow, known for their exquisite marbling and tenderness when cooked properly. The rib bones add extra flavor as the meat cooks. Plan on approximately 1⁄2 to 1 pound of bone-in prime rib per person. As co-owner Jackie demonstrates in the video, a three-rib roast like ours that weighs about 9 pounds feeds about 6 to 8 hungry holiday diners nicely.

Painted Hills Prime Rib

We source our prime rib from Painted Hills Natural Beef, widely regarded as one of the best beef in the country. Raised on family ranches in Oregon, Painted Hills cattle are 100% vegetarian diet-fed and humanely cared for. This exceptional marbling ensures a perfect, juicy roast. In addition to their prime rib, we also carry their New York, tenderloin, and even ground beef selections.

How to Cook Prime Rib

When you get home with your prime rib, pat the meat dry and let it sit out for about an hour to come closer to room temperature before roasting. This helps it cook evenly. We recommend preheating your oven to 450°F and, although optional, searing all sides of the roast before cooking will help to create a nice brown crust. Then reduce heat to 325°F and use a meat thermometer to gauge when it hits your desired doneness, allowing about 13 minutes per pound. Let your masterpiece rest for 15-30 minutes before slicing and serving with your favorite sides. (Speaking of sides, we also have some great suggestions for those too, in both fresh, pre-made deli suggestions and fresh vegetable dishes).

Follow those tips, and your Painted Hills prime rib will earn rave reviews around the table!
